At Rockfig food is more than just nourishment, it’s a story told with every ingredient and every lovingly prepared dish. While we are best known for our fresh, seasonal menus and delicious bush dinners, our Head Chef Lesego has a soft spot for something sweet, especially chocolate cake.
When she’s not out crafting candlelit meals under the stars or preparing gourmet snacks for our guests, Lesego loves to indulge in some baking. Her chocolate cake is a winner – rich, moist, and surprisingly easy to recreate at home.

Here’s her go-to chocolate cake recipe, straight from the Rockfig kitchen to yours.
Ingredients:
- 3 eggs
- ½ cup of oil
- 1 cup of sugar
- 1½ cups of milk
- 2 cups of all-purpose flour
- 1 cup of cocoa powder
- 1 tablespoon of baking powder
- A pinch of salt
Instructions:
- In a mixer, combine all ingredients except the baking powder. (Tip: Start with the liquids — eggs, oil, milk to make mixing smoother.)
- Mix until the batter is smooth and well blended.
- Turn off the mixer, add the baking powder, and gently fold it in with a wooden spoon. Don’t overmix, just enough to combine.
- Pour the batter into a greased and floured cake tin.
- Bake at 180°C (350°F) for about 35–40 minutes, or until a toothpick inserted into the centre comes out clean.
Let it cool, slice generously, and enjoy – preferably with a cup of tea and a view of the bush.
Whether you’re reminiscing about your stay at Rockfig or simply craving something sweet, this chocolate cake brings a little piece of the African bush into your home kitchen.
From our kitchen to yours, happy baking!
